Easy Chicken Dum Biryani Recipe in 5 Steps

Below recipe is for 5 persons.

Step 1 - Get all the required ingredients.

  • Good quality Basmati Rice - long grain. (5 cups / 5 people equivalent )
  • Chicken washed - 6 leg pieces + 1 full chicken breast piece
  • Butter / Ghee.
Ingredients for chicken marination:
  • Garam masala raw smashed. (12 Cardamom, 2 Cinnamon, 3 small star anise, 10 black pepper, 8 cloves, 2 Bay leaf, ) -  Use 75% of this mixture for chicken marination and remaining 25% while boiling rice.
  • Ginger garlic paste  - 5 little spoons.
  • Turmeric powder - half a little spoon.
  • Hot and Spicy Chilli powder -  8 little spoons.
  • Coriander powder - 6 little spoons.
  • Garam masala powder - 3 little spoons.
  • Biryani Masala - 4 little spoons.
  • Shah Jeera - 1 and half little spoon.
  • Salt - 3 little spoons
  • 6 Green chilli - cut into halves.
  • Oil - 8 big spoons.
  • Curd - 5 big spoons.
  • Lemon juice - 1 lemon.
  • Mint leaves.
  • Coriander leaves.
  • Fried Onions - 7 big spoons.

Step 2 - Marinate the chicken

  • Marinate the Chicken with all the above ingredients and mix it very well using hands for 5 minutes and leave it for minimum 30 mins.




Step 3 - Soak and boil the rice

  • Add 5 cups of rice and soak it for about 20. (assuming 1 cup = 1 person)
  • Take 12 to 15 cups of water and keep it on stove on high flame.
  • Add 3 spoons of salt.
  • Add remaining 25% of smashed raw garam masala mixture.
  • Add 1 little spoon of butter / ghee.
  • Add 1 little spoon of shah jeera.
  • Add the soaked rice and cook it on high flame until it is 70% boiled.
  • Drain the water.

Step 4 - Dum preparation

  • Take a large cooking bowl with lid or pressure cooker.
  • Apply butter / ghee to the walls of the bowl.
  • Add the marinated chicken.
  • Add a layer of rice.
  • Add a layer of fried onions, mint leaves, coriander leaves, half a lemon juice.
  • Add another layer of remaining rice.
  • Add another layer of fried onions, mint leaves, coriander leaves, half a lemon juice.
  • Add 1/4th cup of milk mixed with saffron / some food color (or add a pinch of turmeric & red chilli powder if you don't have food color)
  • Add some ghee / melted butter mixed with biryani masala.
  • Seal the lid completely and keep it on stove.

Step 5 - Cooking procedure

  • High flame for 10 mins
  • Medium flame for 5 mins
  • Low flame/Dum for 40 mins.

Enjoy the Biryani

Transfer it to a large bowl and mix it and enjoy the Dum Biryani in Hyderabadi Style.
